The Happy Hour: A Double Dose of Soju

You may look at the title and wonder to yourself “What in the heck is soju?” Soju is a native Korean distilled liquor that is traditionally made from rice, but most modern producers of soju use supplements or even replace rice with other starches such as sweet potatoes, barley, or wheat. It has a taste that is similar to vodka and a very smooth finish. It actually is a lot smoother than many vodkas that we have sampled. While it is great straight up and as substitute for vodka in any cocktails, the following recipes are for cocktails that spotlight the distinctive richness of soju.

*Cherry Blossom

•1 1/2 oz. soju

•1 1/2 oz. sake

•1/2 oz. cherry syrup

•1/4 oz. coconut syrup

•Dash of vanilla syrup

Combine all ingredients in a cocktail shaker with ice and shake until chilled. Strain into a chilled cocktail glass, and serve garnished with a fresh cherry

*Lime Chu-Hai

•2 oz. soju

•1 oz. Rose’s lime juice

•Soda water

Add soju and lime juice to an ice-filled highball glass and stir to combine. Top off with soda water
